Meet the lactose-free, gluten-free, vegan and paleo-free coconut and chocolate truffles. This dessert is made with only four ingredients but is fun and simple to make. Also perfect to be given as a gift. Just put the truffles in a beautiful decorated box. Let's now move on to the preparation.

INGREDIENTS
- 1 ½ cups unsweetened chopped coconut
- 2 tablespoons of pure maple syrup
- ¼ cup + 2 tablespoons of vegan chocolate chips
- ½ teaspoon of coconut oil
- 2 tablespoons of vegan chocolate chips
- ¼ teaspoon of coconut oil
INSTRUCTIONS
- Line a baking sheet with parchment paper. Set aside for later.
- Make the coconut balls: Add coconut, coconut oil, and maple syrup to a blender or food processor.
- Blend until you have a mixture with smaller but still visible pieces of coconut.
- Using 1 tablespoon, scoop up the coconut mixture balls and place them on the prepared baking sheet, spacing them evenly.
- Freeze for 15-20 minutes. About 5 minutes before the balls are frozen it is time to prepare the dark chocolate layer.
- Put the ingredients of the chocolate layer in a saucepan: add ¼ cup + 2 tablespoons of chocolate chips and ½ teaspoon of coconut oil and melt in a double boiler until it becomes a uniform mixture.
- Remove the coconut balls from the freezer. Dip the bottom of a ball into the bowl of melted chocolate using the side of the bowl to scrape off the excess.
- Place them on the baking sheet. Repeat until all coconut balls have been coated.
- Using a rubber spatula, place the melted chocolate in a zippered bag and cut a small corner. Holding the bag over a coconut ball, decorate with the chocolate in a zigzag motion. Repeat for all balls.
- Place the pan in the freezer for 10-15 minutes. Thaw for 10-15 minutes before serving.
- Taste the coconut and chocolate truffles you have prepared!
You can store in an airtight container at room temperature for a week or refrigerate for up to two weeks.
You can also freeze by storing in an airtight container suitable for the freezer for up to one month. Let it defrost for 15 minutes before enjoying.
