Gingerbread cookies are a typical dessert of the Christmas period. A nice idea is to make cookies and decorate them in the company of your family or friends to spend time together and have fun while it's cold outside.
You can also prepare them and put them in a nice decorated box and give them away. If you want you can attach a colored ribbon to the cookies and hang them on the Christmas tree.
For sure there will be a great smell in the kitchen as you prepare these cookies because among the ingredients there are cinnamon and cloves. Now I tell you all the ingredients and the preparation.

Ingredients
For the biscuits
- 260 g of unsalted butter
- 160 g of powdered sugar
- 160 g of honey
- 2 medium egg yolks at room temperature
- 600 g of flour 00
- 4 teaspoons of baking soda
- 1/2 teaspoon of salt
- 4 teaspoons of powdered ginger
- 4 teaspoons of ground cinnamon
- 4 teaspoons of ground cloves
For the royal icing
- 2 egg whites
- 300 g of powdered sugar
Preparation
- Put the cold flour and butter in a food processor and blend for a few seconds. Then add honey, powdered sugar, egg yolks and spices. Blend until the ingredients are compacted. Transfer the dough to a pastry board and knead until the dough is smooth. Shape the dough into a loaf and wrap it in cling film.
- Leave to rest in the refrigerator for three hours.
- Then roll out the dough on the pastry board where you will have dusted the flour first. You need to get half a centimeter high dough. Have fun with the cookie shapes to cut out the dough.
- Bake at 180 degrees by placing the cut out dough on parchment paper and let it cook for 15 minutes. When the cooking is finished, take the biscuits out of the oven and let them cool.
- Now prepare the royal icing by beating the egg whites at room temperature and while whipping add the icing sugar a little at a time.
- When the royal icing is ready, if you prefer, you can decide to color a part with a food coloring.
